Hint: If you are pressed for time, carpaccio can be prepared much faster. We recommend buying pre-boiled beets (thermically sealed) – this way, this amazing dish will be ready in just 20 minutes.
Boil the beets. After cooling, peel and cut them into thin slices. Put the slices onto a plate. Season with olive oil and balsamic vinegar and sprinkle with freshly ground black pepper. Use a teaspoon to place hummus onto the beets. Decorate the dish with parsley, arugula, pomegranate seeds, black caraway seeds and roasted sunflower seeds.
